We’re Back, Baby!

After ten long months, we’re back on Deep Thoughts.

We’ve been in Alton for 10 days, provisioning the boat for our journey ahead. Tomorrow we head out for the most challenging part of the Loop — a 290-mile journey,  200 of which are without gas.

Genny Lives!

Good news — Genny is working so we could have power for the fridge and stove when we are underway and in the evening. But, we really have to conserve fuel so we’re not going to ask Genny to toil all that much.

We bought ice for the cooler, which should last for about 5 minutes since it’s going to be 35°C EVERY DAY! That’s 95°F for my American friends. Keeping our fridge food fresh is going to be a challenge. I wasn’t thinking when I went grocery shopping during our time at Alton. Our freezer is quite full. Without power, it should be good for 24 hours. Then I have to start cooking it all.

I Love My Instant Pot

I bought an Instant Pot Duo Crisp for the boat. I have one at home and I absolutely love the convenience of being able to roast, bake, broil, air fry and pressure cook in one appliance.

I also have a Mini Instant Pot at home. It’s perfect for rice and eggs as well as small meals for dinner. I wanted to cook eggs in the Duo Crisp I bought for the boat, but there is no egg button the way there is for the Mini. So, I googled how to cook eggs since I wasn’t sure if it was just pressure cook on high for five minutes.

Do you know what I found out?

You can air fry eggs!

I didn’t believe it at first so I tested the instructions on two eggs. It worked perfectly, so I cooked five more. We will now be living on tuna, chicken, and egg sandwiches for the next 5 days.
